In the spotlight: cauliflower
Cauliflower, a versatile vegetable that can be used in many ways: a wok with cauliflower, cauliflower soup, cauliflower rice, cauliflower steak or simply raw cauliflower as an appetizer! It’s also a perfect vegetable for those on a low-carb diet or for the vegetarians among us. By the way, did you know that besides the classic white cauliflower, there are also green, purple and orange varieties? Talk about a colorful vegetable! But now enough about cauliflower, time to fire up the barbecue and prepare our delicious cauliflower steak!
Preparation of cauliflower steak on the BBQ
We use a Loewy 50 charcoal barbecue to prepare this recipe. The aromas of a charcoal BBQ will ensure a deliciously imbued BBQ flavour in the cauliflower steak.
To make a cauliflower steak, it’s best to choose nice large cauliflowers. Smaller cauliflowers fall apart more easily when you cut them.
First of all, remove the leaves from the vegetable. Then cut the cauliflower into slices of about 1 cm. Brush with the 4 tablespoons of olive oil. For this, use one of Barbecook's marinade brushes such as the stainless steel silicone brush or a wooden brush.
Grill the cauliflower steaks on the barbecue, 5 minutes on each side over medium-high heat. When grilling, the flavor of the cauliflower will come out fully, without losing too much of its bite. The cauliflower steak will even get deliciously crispy on the outside.
Set aside 2 tablespoons of the chopped herbs. Mix the remaining herbs with the garlic, shallot, chili pepper, olive oil, lemon juice, vinegar, mustard, pepper, salt and paprika. Season to taste. Allow to soak for 30 minutes. Just before serving, put the separate fresh herbs also in the mixture and spoon a generous portion of the mixture onto the thick slices of grilled cauliflower.
Trust us, you will never have eaten such a delicious cauliflower steak before!
Extra tips
In addition to a cauliflower steak on the BBQ, cauliflower is often served as a side dish or on a brochette. In that case it is recommended to blanch your cauliflower pieces before grilling them on the barbecue. It takes a lot longer to cook hard vegetables like cauliflower, broccoli or carrots.
