Butternut Soup on Nestor

In autumn, when the leaves change to warm hues and the air gets a little chilly, there is nothing quite as cosy as a cup of hot soup. Go for a cosy autumn barbecue with butternut soup over the fire. This extraordinary method of preparation gives the soup a unique and smoky character, making it a real treat for the taste buds.

Caveman style grilling

Ever heard of Caveman style grilling? It is a barbecue method where food, usually large pieces of meat, are placed directly into the open fire. Caveman style grilling is a very simple and above all ancient way of grilling. It gives food a unique, smoky flavour and texture.

When people think of caveman style grilling, they quickly think of a nice piece of meat that you put directly on glowing charcoal or between the glowing wood. But did you know that this tough way is also very good for roasting vegetables? The intense and direct heat of the fire gives the vegetables extra flavour.

Butternut soup over the open fire

For this preparation of butternut soup, we use the Barbecook Nestor. This wood barbecue invites all to gather around the fire and cook together. Perfect for a sunny autumn day.

Light the Nestor using some wood wool or firelighters. To light the Nestor, it is best to use smaller pieces of wood! When there is a nice flame, larger pieces of wood can be added.

Place the butternut between the wood and let it gradually turn black. It is important here that the butternut is turned regularly. For this, you can use the Barbecook premium gloves. This process takes about an hour, depending on the size of the butternut. By regularly pricking the neck of the butternut, it soon becomes clear when it is done.

When the butternut is done, cut it in half. Now you can easily scoop out the flesh.

After this you can start on the other vegetables. Easy here is the Barbecook bamboo side table. Coat the cast-iron grid of Nestor with sunflower oil. For this you can use one of the Barbecook spatulas. Chop an onion and red bell papper and grill them on the grill plates.

Then place the elevated grill on Nestor and hang the simmering pot in the wok and simmering pot holder. In this, we will prepare the soup. Melt a piece of butter in the simmering pot and add some fresh rosemary. After this, add the grilled onion, pepper and the flesh of the butternut. Let the vegetables simmer together for a while. Then pour 1.5 l water into the simmering pot and add some chicken stock.  Then season to taste with salt, pepper, paprika and/or cinnamon. Simmer the soup over the Nestor for 15 minutes. If necessary, add some extra wood in the Nestor's firebowl, that way you can be sure the fire is still warm enough.

After this, all you need to do is blend the soup!
