Indian summer, also known as late summer, is an enchanting season when nature shrouds itself in warm hues of red, orange and yellow. The days get shorter, but the sun's rays continue to caress lovingly for a while. At Barbecook, Indian Summer is of course the perfect occasion for a cosy autumn barbecue.

Pumpkin season

At Barbecook, we think it is important to work with seasonal products. So for our autumn barbecue, we resolutely choose pumpkin.

Barbecuing pumpkin is a delicious way to take autumnal flavours to a whole new level. It gives pumpkin a smoky, roasted flavour that perfectly matches the warm and spicy notes of this seasonal vegetable. By grilling pumpkin on a charcoal barbecue, you create a crispy outside and the inside becomes soft and creamy. In this way, this vegetable makes the perfect main or side dish during your autumn barbecue.

Pumpkin on the Magnus

In this recipe, we choose the Barbecook Magnus charcoal barbecue. Magnus has a lid that allows us to grill the pumpkin both directly and indirectly. Magnus also has an extra large grilling surface and flexible cast-iron grids, allowing us to grill a nice piece of meat in addition to the pumpkin.

Cut the pumpkin into slices. For this, you can use the Barbecook chef's knife and a sturdy bamboo cutting board. In principle, you can eat the skin of the pumpkin, because it gets very soft while grilling. 

Brush the pumpkin slices lightly with olive oil to prevent them from sticking to the grill rack. We always like to season the olive oil with our favourite spices first. Go for pepper, salt, garlic and paprika. Want to try something different? Then go for a touch of cinnamon! Make it easy on yourself and go for the Barbecook sauce pan with marinade brush.

Now that the preparations have been made, we can move on to lighting the bbq. The Magnus Comfort and Magnus Premium charcoal barbecue come with a built-in charcoal starter as standard. Fill it with high-quality charcoal or briquettes and place it over 2-3 firelighters. This way, you can start grilling within 20 minutes. If your charcoal barbecue does not have a charcoal starter, you can easily buy one separately. When a grey layer appears on the coals, you may pour them into the barbecue pit. Then add some more coals. This way, you can be sure that your charcoal barbecue will stay warm for a long time.

Ideally, the barbecue should have a temperature of 200° for grilling the pumpkin. You can easily follow this on the integrated thermometer on the lid. Place the pumpkin slices on the grill rack and close the lid. Grill the pumpkin for 5 to 7 minutes on each side. This obviously depends on the thickness of the slices. Wait until the slices are soft and nicely roasted.

Then remove the pumpkin from the Magnus charcoal barbecue and serve with a knob of butter, fresh garden herbs or a splash of creamy balsamic vinegar for extra flavour. Enjoy!

No idea what to serve with your grilled pumpkin? Go for a juicy côte à l'os. Grill it first directly and then indirectly for best results! Present with coarse sea salt and fresh rosemary.

Tip: Be sure to let the meat rest for a while after grilling. This will give the meat juices a chance to spread better over the entire piece of meat. Moreover, this will allow you to enjoy a fuller flavour of the meat.
