Turkey on the Barbecook Magnus

This holiday season, step away from the traditional oven and immerse yourself in the outdoor experience, following our guidance to create a delicious Christmas dinner that will undoubtedly have your guests screaming for more.

For this recipe we choose the Barbecook Magnus Premium. With its lid, it ensures even cooking and creates a delightful smoky flavor. The built-in charcoal starter makes lighting the BBQ quick and effortless. Additionally, the two charcoal baskets in the Barbecook Magnus Premium allow us to create different cooking zones for achieving the perfect balance of a crispy skin and juicy inside. Finally, the Magnus Premium comes with two side tables, making preparation a breeze.

Ingredients

  • Whole turkey (size depends on the number of guests)
  • Olive oil or melted butter
  • Salt and pepper
  • Herbs and spices (rosemary, thyme, sage, garlic powder, etc.)

How to prepare the turkey on the Magnus Premium

To begin, rub the turkey with either olive oil or melted butter. This step is crucial for achieving a crispy skin. Afterwards, generously season the turkey with salt, pepper and your choice of herbs and spices. Consider creating a rub using herbs such as rosemary, thyme, sage, garlic powder or a combination of your favorite spices for added flavor. To add some extra favour, we put some slices of orange under the skin of the turkey. This simple yet flavorful preparation sets the stage for a deliciously seasoned Christmas turkey.

Begin by filling the integrated charcoal starter and lighting up the Barbecook Magnus. Once the charcoal is covered in a gray layer after about 15 minutes, pour it into the charcoal baskets. Next, add more charcoal and wait until the barbecue reaches approximately 180 degrees. For the preparation of the turkey it is important to have both direct and indirect heat zones. That’s why we are going to use the Barbecook charcoal baskets. Place a basket on each side of the Magnus and leave an open centre in the middle. Position a drip pan in the middle, beneath where the turkey will be placed, to catch drippings and prevent flare-ups. To create some extra favor we recommend to pour some wine in the drip pan. Set up the Barbecook grids on the lowest level and place the seasoned turkey on the grill, with the breast side up, over the drip pan. Finally, close the barbecue lid to retain heat and smoke, infusing the turkey with a delicious smoky flavor.

Grill the turkey until it reaches an internal temperature of 74°C in the thickest part of the thigh. Use a Barbecook digital thermometer to check the temperature. Check both the thigh and the breast for doneness. Add extra charcoal to make sure that the temperature in the Magnus stays the same.

Optionally, you can baste the turkey with its own juices or a basting liquid every hour to keep it moist by using a Barbecook brush. Once the turkey reaches the desired temperature, remove it from the barbecue, cover it loosely with aluminum foil, and let it rest for about 20 minutes before carving.

Carve the turkey and serve with your favorite sides on one of the Barbecook bamboo boards. Serve with a fresh green beans and mashed patatoes.
