Butternut soup on the BBQ

Nothing tastes better than a cup of hot soup on a cold winter's day. A butternut has a sweet nutty flavour. The butternut originates from Guatemala and Mexico and is often used in Asian and North African dishes. In Belgium, the butternut is mainly seen as a typical winter vegetable and an ideal substitute for pasta or potatoes. The butternut is characterised by its orange flesh. It’s the perfect basis for a tasty, full-bodied winter butternut soup.

Preparation of butternut soup on the BBQ

For the preparation of the butternut soup we use the Barbecook Junko, but it’s also perfectly possible to prepare this dish with a charcoal barbecue. Peel the butternut and remove the seeds. Then cut the vegetables into small cubes. Peel the onion and cut in the same way. Braise the butternut and onion with some butter in a Barbecook simmer kettle. Add the nutmeg, pepper and salt and leave to simmer for a while. Then pour about 1.5 litres of water and four stock cubes (for 500 grams of butternut) into the simmer kettle and let the soup simmer for half an hour. Mix the soup finely and finish off with some dried basil. Miam!

Extra tips

Unfortunately, the butternut is known for its unmanageable character. How do you start to peel such a thing and then cut it into cubes? We'll fall right in with the door and reveal our secret to you. The secret can be found in almost every kitchen, namely the microwave. Put the butternut in the microwave for a few minutes and it will be much easier to peel and cut it. Follow the step-by-step plan below:

  1.  Pierce a few holes in the skin of the butternut. These will allow steam to escape from the vegetable, preventing it from exploding.
  2. Cut the hat from the top and bottom of the butternut.
  3. Place the butternut on a plate and put it in the microwave for 3 to 5 minutes.
  4. Let the butternut cool down and remove the skin with a peeler.
  5. Cut the butternut in two and remove the seeds.
  6. Cut the butternut into small cubes and you’re done. You can start preparing your butternut soup!
