Tacos with smoked chicken

At Barbecook we lost our hearts in the Mexican kitchen. Nothing better than a summer day with tacos, burritos or chilli con carne on the barbecue. To make it a bit more challenging, we choose in this recipe for tacos with smoked chicken.

Good preparation

As delicious as this taco recipe is, we have to be honest and admit that it requires some time. Marinating the chicken will already take 12 to 24 hours. Don't panic, a good preparation makes everything perfectly possible. Let's go!

Preparation of tacos with smoked chicken in the smoker

Step 1 - The marinade

We start this recipe with the marinade for the chicken. Mix all the ingredients in a large bowl and completely submerge the farm chicken. Place in the fridge for about 12-24 hours. Then take the chicken out of the marinade and let it dry. 

Step 2 - Smoking

We use the Barbecook Oskar for smoking the chicken. With the Barbecook charcoal starter, some Barbecook lighter cubes and matches, the smoker will be ready for use in no time. Pour the charcoal into the bowl. Wrap some drained lemon smoking chips in aluminium foil, poke a few holes in it and place on your charcoal. Place the chicken on the grid of the Oskar, fill the bowl with water and close the smoker. With the help of the adjustable air supply, you maintain control over the temperature during the entire process. This should not exceed 100 °C for our smoked chicken. The water ensures that the chicken doesn’t dry out and remains tender. We recommend checking regularly to see if any water needs to be added and if there is still enough smoke. If not, you need to add some extra smoking chips. Once the chicken has reached a core temperature of 70 to 72°C, you can remove it from the smoker. Check this with Barbecook's digital thermometer. After that, you can easily pluck off the meat.

Step 3 - The salsa and finishing the tacos

While the chicken is in the smoker, there is time to make the tomato-mango salsa. Finely chop all the ingredients and mix. Season to taste.

Then it's time for the tacos. Choose ready-made taco shells or home-made tacos. When you put wraps on an oven grill at 200°C for 5 minutes, you have a homemade taco.

Fill the taco with the tomato-mango salsa, the pieces of smoked chicken, sour cream, lemon juice, cheddar and mango slices. Taco-lishious!
