One of the favourite Flemish classics is undoubtedly ham rolls in cheese sauce, also known as chicory rolls. Not only is it super delicious, but it brings back plenty of warm memories. This got us thinking: chicory rolls on the BBQ, is that possible? Du-uh, challenge accepted!
6 stumps of chicory
Several slices of bacon
Pepper and salt
At Barbecook we are not afraid to think out of the box, so we were looking for a way to make grandmother’s recipe of chicory rolls Barbecook/BBQ proof. Barbecook has a huge range of accessories. From lighting tools to cleaning tools and from bamboo boards to spatulas, tongs and knives. Plenty of choice! For our chicory with bacon, we use Barbecook’s sausage grill. Although maybe we should change the name to the chicory grill. To be continued...
For an efficient BBQ session, we recommend that you prepare a few things in advance in the kitchen. Fill a pot with water and let it boil. Cook the chicory for 4 minutes with half a teaspoon of salt and sugar. Then let the chicory cool down and squeeze out the excess liquid. Roll the chicory in the bacon until you have nice rolls.
For this unique recipe of chicory with bacon we choose the Barbecook Loewy. Thanks to the handy QuickStart® system, the barbecue is ready for grilling in 15 minutes. We use the Barbecook dome for the preparation of our chicory with bacon. This dome reflects the heat of the fire, which will give colour to the chicory on both sides.
Place the chicory with bacon in the provided places in the sausage grill and close it. Season with pepper and salt. Place the sausage grill with the chicory centrally on your grid and grill until the bacon rolls are crispy. Then remove the chicory and bacon from the grill and take them out of the clamp. Sprinkle with Gruyère cheese. Because the chicory rolls are still hot, the cheese will melt. Delicious!
Do you want the ultimate outdoor cooking experience? Then choose one of our gas barbecues with side burner, such as the Siesta 612. Thanks to the side burner, you don't need to make any preparations in the kitchen. Fill a saucepan with water and let it boil, while your gas barbecue heats up slowly.
Then grill the chicory in the sausage grill as described above.
The whole ‘chicory and bacon’ recipe can be done outdoors thanks to Barbecook’s Siesta gas barbecue. Furthermore, most of the parts can be put in the dishwasher afterwards. Who said barbecuing always takes a lot of time and work?
