1 kg Belgian Blue Steak
Pepper and coarse sea salt
An entrecote is a premium piece of beef from the thin loin with a small rim of fat. A piece of meat to really enjoy! And admit it, what is tastier than a delicious entrecote of our own country? At Barbecook, we choose for Belgian Blue Steak without any doubt. Belgian Blue Steak is known for its tender meat. With its enormous muscle mass, this type of beef provides the ideal meat to fat ratio and thus the perfect entrecote. Let's grill!
We use the Barbecook Karl to prepare our Belgian Blue Steak. This stylish table grill has it all: power, comfort and design. This Barbecook charcoal barbecue has a built-in ventilator and is also fully dishwasher-proof. Of course, you can also use another charcoal barbecue or gas barbecue, such as the Stella.
It's important to take the Belgian Blue Steak out of the fridge in time. If you put a Belgian Blue Steak immediately on the barbecue when you take it out of the fridge, it will be 'shocked', which causes the fibres to contract and the steak to become tough.
Fill the inner bowl of the Karl with charcoal and a few lighter cubes. Light the lighter cubes and wait until a grey layer appears on the coals. Then add extra charcoal and wait again. The built-in ventilator gives you full control over the whole process. Brush the entrecote with olive oil and season with salt and pepper. Sear the Belgian Blue Steak briefly on both sides. If desired, you can use the core thermometer to check the temperature of the meat. A sirloin steak is medium rare at 54 degrees. Take the meat from the grill and cut into thin slices. Season with some extra pepper and coarse sea salt.
In general, a Belgian Blue Steak doesn't need much more than pepper and some coarse sea salt. Still, many people like to experiment with spices in order to make tasty marinades. Of course, we can only support this!
With the Barbecook sauce pan in stainless steel you can make your favourite marinades in no time. Once the marinade is ready, you can rub the entrecote all over with the brush.
If you want something even more special, Barbecook also has a marinade injector. This allows you to inject the Belgian Blue Steak with your favourite marinades. We advise you to inject the Belgian Blue Steak a few hours in advance to guarantee a delicious taste.
Feel like enjoying a Belgian Blue Steak with a light smoke flavour? Then try our Barbecook smoke chips. Soak the chips in water for a few hours and then sprinkle them on the hot coals. The Belgian Blue Steak will immediately acquire a delicious flavour. The smoke chips work best with indirect grilling. For this reason, the chips are best used with the Adam 50 Top or the Barbecook Loewy with a Barbecook dome. Do you want to use the smoke chips in combination with your gas barbecue? Then use our universal smoker box!
