How does an Oskar S smoker work?
With the Oskar S, you can smoke as well hot as cold. Cold smoking takes place at a temperature between 20 and 25 °C. This is best done during the cold winter months. To do this, you need to place a cold smoke generator in your smoker, which you fill with smoke dust and then let it smoulder. With cold smoking, your ingredients are not cooked, but they get a nice smoky taste and you can keep them for a longer period of time. Hot smoking takes place at a temperature between 50 and 95 °C. Your ingredients are cooked and given a smoky taste. To smoke hot with an Oskar S smoker you need the following: wood or charcoal, Barbecook lighter cubes, a long match or lighter and a liquid such as water, broth or wine. You start by removing the upper part of your smoker. Then light your wood or charcoal on the charcoal grill at the bottom of your Oskar S smoker. Once your wood or charcoal is covered with a thin layer of grey ash, sprinkle soaked smoke chips or smoke wood over your wood or charcoal. To prevent your preparation from drying out, the Oskar S smoker is also equipped with a pan into which you pour a tasty liquid of your choice. For even more flavour, you can also add extra herbs. After that you place the grid, the top and the lid back on and you can start smoking! You can regulate the temperature inside your smoker simply by opening the air supply holes (for a higher temperature) and close them (for a lower temperature).
