Health is on everyone’s minds at the moment. But it’s perfectly possible to enjoy tasty and interesting meals from the barbecue without risking your health.

- Never put refrigerated meat straight onto the grill
Always take the meat out of the fridge about an hour before grilling. Extra tip: you can also pre-heat the meat in the oven at a low temperature (e.g. 50 °C). This will warm your meat on the inside too.
- Let your ingredients rest
If you give your meat time to rest in between transferring it from the fridge to the grill, and from the grill to the plate, it will be more tender and tastier.
- Wait until your grill is hot enough
Use the 3-second rule to check if your fire is ready for grilling: if you can’t hold your hand over the grill for more than three seconds, you’re ready to grill. Make sure the flames don’t touch your meat or fish. Move your food to a different part of the grill or move the charcoal grill higher up.
- Always follow hygiene rules
Before, during and after grilling, use kitchen towels and cling film, and clean your grills regularly to remove any residual food.
