Pineapple with vodka on the BBQ

After a delicious barbecue party, we all like to enjoy a sweet treat. Don't put your barbecue aside too soon, because for this pineapple dessert we will also use the BBQ! How about grilled pineapple with vodka? A delicious exotic dessert!

Pineapple, a refreshing and versatile fruit

Pineapple undoubtedly makes us all dream of an exotic beach vacation, but did you know that pineapple is a winter fruit rather than a summer fruit? The season runs approximately from November to April. That's when pineapple is at its best. Nowadays, however, you can buy pineapple all year long in the supermarket. A pineapple is ripe when the bottom smells slightly sweet and the fruit has a yellow glow. With pineapple you can do an infinite number of things. It adds a refreshing touch to a salad, on a pizza or in a dessert. And it all gets a little better when you incorporate pineapple into a barbecue recipe, because pineapple on the BBQ is irresistible!

Preparation of pineapple with vodka on the BBQ

To prepare the pineapple with vodka on the BBQ, we use a Barbecook Edson BBQ. This charcoal barbecue has the look of a barrel and comes in two colours: black an army green. It can be used as a grill, but it can also be transformed into a bar table, fun fun fun!

Put all the ingredients for the marinade in the blender. Cut the pineapple lengthwise into +- 8 pieces and remove the hard part. Place the pineapple in a bowl, pour over the marinade and cover with plastic wrap. Allow the marinade to soak in for several hours.

Place a few lighter cubes on the bottom grid of the Edson BBQ and place the Barbecook charcoal starter on top. Fill the charcoal starter with charcoal and light the lighter cubes with a long match through one of the holes at the bottom of the starter. When there’s a thin layer of grey ash on the coals, you can drop them into the barbecue bowl. Next, place the grill on the BBQ.

Remove the pineapple from the vodka marinade and drain. Now skewer the pineapple pieces on skewers. We use Barbecook's chrome skewers with wooden handle. Fry the pineapple skewers on the BBQ until golden brown for 3 to 4 minutes.

Meanwhile, prepare the mascarpone cream. To do this, stir the mascarpone until smooth with 2 tablespoons of vanilla sugar and 1 tablespoon of lemon juice.

Serve the grilled pineapple with the mascarpone cream and some extra vodka marinade if desired. Finish off with finely chopped pistachio nuts.
