HOW DOES A BBQ POULTRY ROASTER WORK?
When you prepare a chicken on a BBQ poultry roaster, you need to prepare your barbecue for indirect heat. Your chicken will cook through the warm air circulating in your barbecue. It is therefore important to use a barbecue with a lid when working with a BBQ poultry roaster. With the Loewy charcoal BBQ, you can use the corresponding dome. First of all, heat your barbecue to a temperature of around 210°C. In the meantime, pat your chicken dry with some kitchen paper and brush it with a dry herb mixture of your choice. Then put half a can of beer, soda or some wine in the cup of the BBQ poultry roaster and add some matching herbs. Place the back of the chicken on the BBQ poultry roaster and then put it on your barbecue with the lid closed for 60 to 80 minutes. In between, look as little as possible, but check with a thermometer whether the breast has a core temperature of 70 °C and the thigh one of 85 °C. Result after a good hour: crispy crust on the outside, nice and tender on the inside. Remove your chicken from the BBQ poultry roaster and let it rest for 10 minutes before starting to eat it.
