Lamb crown roast on the BBQ

At Barbecook, we like to have a cosy dinner. And admit it, we don't always have to choose for a classic entrecote or côte à l'os! Sometimes it can be a bit more special, which is why we choose for a lamb crown roast in this recipe. Wonderfully tender and always festive!

Lamb or mutton?

Lamb is meat from sheep younger than 9 months. Lamb is not only much lighter in colour, it also has a finer taste.

There are two ideal times to buy lamb during the year. During spring, around Easter, you can buy meat from the so-called 'Easter lambs'. This meat comes from lambs that stay in the stables and are fed with mother's milk and concentrated feed. In October-November, you can also buy a lot of lamb. This meat comes from lambs that have been at pasture all summer long, the so-called 'meadow lambs'. This lamb has a much more pronounced flavour compared to the 'Easter lambs'.

Preparation of lamb crown roast on the BBQ

For this recipe, we recommend marinating the lamb crown one day in advance.

Mix a few tablespoons of olive oil with two tablespoons of mustard, one finely chopped clove of garlic, the juice of one lemon and pepper & salt. Rub the lamb crown roast with the marinade, place the preparation on a plate and put it in the fridge. Don’t forget to cover the dish with foil. Make it easier on yourself and use our stainless steel sauce pan and marinade brush for the marinade.

For the preparation of the lamb crown roast we use the Barbecook Siesta. Light your Siesta and let it heat up to a temperature of 200 °C with the lid closed. Thanks to the built-in thermometer, you can immediately see when your gas barbecue has the right temperature.

Put the lamb crown roast on the grill and cook for 15 minutes with the lid closed. Then cook for another 15 minutes with the lid open. In this way, you are sure of a nice pink lamb crown roast. Enjoy your meal!

Serving tip: As a side dish, choose spicy Turkish bread and a few grilled vine tomatoes or other delicious vegetables. Prepare the tomatoes and/or other vegetables in Barbecook's reusable grill pan in enamel. Add some olive oil and pepper & salt. Put the grill pan on the barbecue and let it grill for 15 minutes. Good to know: the grill pan can be put in the dishwasher!

The perfect piece of meat

Does the idea of a perfectly cooked piece of meat stress you out? No worries, at Barbecook we like to help you out. In order to make sure that your lamb crown roast and other delicacies are cooked to perfection, Barbecook came up with a core thermometer.

Make sure you insert the thermometer pin in the middle of the meat and not near the bone of the lamb crown. Preferably close the lid when measuring the temperature. This way, you guarantee the most accurate result possible. For a nice pink lamb crown roast, the core temperature should be between 58 and 62 °C.
