Preparation of grilled hot dogs with coleslaw
For the preparation of the hot dogs with coleslaw we choose the Barbecook Siesta 412. Thanks to the practical one hand control buttons you can start grilling within 10 minutes. The grids of the Siesta are made of enamelled cast iron, an extremely high quality material and ideal for searing the sausages in a good and even way. Extra handy on the Siesta is the warming rack inside the gas barbecue. Let the sausages rest for a while on this rack when they’re ready, while they still remain warm.
Light the side burner of the Siesta and place a pan on the fire. Peel and finely slice the onions. Melt the butter in the pan and add the onions. Lower the heat and fry the onions until they are cooked. Add the brown sugar and allow to caramelize. Then deglaze the onions with half the bottle of beer and let it boil for a while. Remove the pan from the heat and set aside.
Grate the cabbage and carrots. Make the dressing by mixing the yoghurt, mayonnaise and the juice of 1 lime. Season with finely chopped parsley and salt and pepper. Then mix the dressing with the grated carrots and cabbage.
Put a few spoons of mayonnaise in a measuring cup and add 3 to 4 spoons of pickles. Mix together and scoop the mixture into a piping bag.
Heat your gas BBQ and grill the sausages for about ten minutes. Turn the sausages regularly with one of Barbecook’s grill tongs, such as Barbecook’s sausage tongs. Toast the baguette briefly on the barbecue so that it becomes crispy and cut it in half.
After this you can start making the hot dogs. Top the baguette with a sausage, caramelized onions, a few spoons of coleslaw and the pickle mayo. Finish with Bicky onions and/or some chives.
