INGREDIENTS
Barbecook Major, Optima or Loewy
Barbecook Dome
half a pineapple
300 g chicken
thyme
rosemary
basil
mint
olive oil
2 cloves of garlic
pepper & salt
1 mozzarella ball
1 loaf of bread
50 g butter

It must have been one of the summer hypes: pull apart bread. Normally, this is made in the oven but, during one of the few summer days we had this August, I tried it on the barbecue. I make a version with grilled pineapple and grilled chicken. If I had cut into it a bit deeper, it would have been even better. Nevertheless, it was a successful experiment. Ideal for those who want to eat a snack while waiting for the t-bone steak or ribs.

Preparation

  1. Peel the pineapple, cut into slices. Grill on the barbecue. Cut the chicken into strips. Grill that on the barbecue too. Then cut the pineapple slices and chicken into pieces.
  2. Cut a notch three quarters into the bread with a (serrated) bread knife. Take two sheets of aluminium foil. Brush them with olive oil. Wrap the bread in the aluminium foil and place it on the barbecue.
  3. Melt the butter. Finely chop the herbs and garlic. Mix into the butter and season with salt and pepper. Cut the mozzarella into pieces.
  4. Remove the bread from the grill and put the chicken, melted garlic butter, mozzarella and pineapple in the notches. Wrap the bottom in aluminium foil and now place the bread on the Barbecook Loewy for 20 to 25 minutes with the Barbecook Dome until the cheese is nicely melted.
  5. Serve immediately.
